Beer 1: The English Mild
Taste: Nutty, English, Sessionable
The HooDoo Mild is our take on an English-style bitter – a classic UK session beer. These beers are originally poured via hand-pump and served at “cellar” temperatures. Often called “sessionable” because of the ease of consuming several in a single setting, ours is made with English Maris Otter malt, is naturally carbonated, and drinks clean and crisp, with a subtle complex malt flavor (that just might leave you craving more). A single hop charge at the beginning of the boil gives this beer a supporting bitterness, while letting the delicious malt shine throughout each gulp.
Pair with: Roasted chicken or pork is a great choice to have with our Mild, along with grilled meats, as long as they’re not too spicy, but maintains a nice caramelized char. A good filet of salmon that’s cooked with brown sugar would be equally tasty, or any Alaskan fish would be great pair next to a pint of bitter, since a many of the British malt varietals are grown close to the ocean. It’s sweet on shellfish, which is also a fine pairing since it won’t overwhelm. For cheese, try any English cheese: Farmhouse cheddars, a mild stilton, cotswold or sage derby. Maybe your thing is desert? This beer is great with a good ol’ Oatmeal Cookie.

Beer 2: American IPA
Taste: Floral, Citrus, Balanced
Our IPA has a juicy backbone of Northwest US pale and crystal malts. Big floral and citrus hop aroma and flavor balance out the delicious malty base. A smooth bitterness in the finish refreshes the palette, preparing you for another sip.
Pair with: Any type of meat you prep with a spicy intent: BBQ Pork, Spiced rubbed shrimp, Frank’s Red Hot Wings, 4-star Thai anything, hot curry in any color. These cheeses: Gorgonzola or Cambozola, Beecher’s Flagship Cheddar. Give it a go with your next Carrot or Ginger Spice Cake.

Beer 3: HooDoo Stout
Taste: Creamy, Coffee, Chocolate
HooDoo Stout is the perfect beer for a Fairbanks Winter. A cross between an Oatmeal and Cream stout, this beer is made with dark roasted barley malts, flaked oats and milk sugar that lend it deep milk chocolate and creamed coffee aromas and flavors.
Pair with: Stout balances out rich, spicy food. Try it with big, flavorful BBQed meat of any kind. Pairs awesome with fresh, briny oysters.
